Sooo Cold!

It was 8° this morning and only supposed to be a high of 29°!  No chance of it letting up for a couple of days.  Ugh! 



Random topic:  Greens. I'm on this kick where I want to try new produce to keep from getting bored.  I would like to try greens since they are supposed to be so good for you.  Being from PA originally, I wasn't brought up eating greens.  Once in a while my Mom would make wilted kale with olive oil and garlic but that's it.  I've made kale chips at home.  I've had different "mystery" greens in salad mix that I really don't know what they were.  Most I liked but some were bitter.  I would like to experiment with different kinds and different ways of preparing them.  Healthy ways.  Not the fattening "southern" greens with bacon and ham.  I know that I also don't wan't the waterlogged greens cooked in alot of liquid.  I guess I'll scour the internet for a recipe that sounds good and give it a try.  Any suggestions?

I MUST exercise tonight!  I skipped last night because I had a headache and I regret it.  This morning I wrote a note to myself on the chalkboard in my kitchen saying:  "Exercise!  It will only take a couple of minutes."  It's true.  What's a measly 30 minutes?  It will be over in no time.  Now to do it.

  1. I LOVE greens. Gotta tell you, though, you can make delicious collard greens with very little fat and the pot 'liquor' that's left behind is delicious with a bit of healthy corn bread crumbled on top.

    My favorite is beet greens. (In your picture, the one on the left is a baby beet green) Cut off the tops and clean them really well--they have a lot of mud and grit on them--finely slice them and saute with a dab of olive oil and then top with a sprinkle of shelled sunflower seeds.

  2. Mel - thanks for the tip! That sounds really good. I've been eating them in salad mix but never knew what they were. I'm going to try your suggestion.

  3. Sunny, I try my best to leave produce in its natural state. No cooking, if possible. I alter it by the dressings I use...and I've started making my own dressings since I realized how much MSG and sulfites are in bottled dressing. Might want to give that a try, too! And steaming is your best cooking-method-friend for any veggies. Try different spices to spice it up. Look into Penzey's; they have GREAT spices, including many delicious no-salt varieties! :D

  4. Thanks, Sunny! I've gotten into this kick with making my own dressing recently, too. I'm currently obsessed with a Balsamic Viniagrette recipe that I found on Food Network. It is SO GOOD! It's just olive oil, balsamic vinegar, S&P, chopped garlic and a little brown sugar. Sweet, tangy and delicious!
